water pan

Do any of you use a water pan in your Bradley?  I don't mean the water bowl for the burned bisquetts but a water pan on a low shelf.

I have usedit went I want to catch the dripping from the butts or racks. I have also used it with some liquids, beer, wine or juices to enhance flavor.

Yes.

Mainly when doing long cooks, and to catch the drippings for making gravy or sauce.

Some times just water, some times red wine, some times beer

I think there are several that repace the bradley bowl with a larger tin for more volume of water for both moister and heat recovery. I would think the more moister in the cabinet (which I don't think is bad) the more you have to open the vent to full whick is where I almost run mine now.

I use one one the bottom shelf filled with ice when I am cold smoking cheese. Keeps the cabinet right about 64-66*
