Brisket marinade, cooking time

I getting ready for my 3 rd smoke in my bradley. Iam going to do a brisket and 1 pork butt roast. Looking for a good, but easy, marinade. going to put it on fri. night using my new maverick dual temp. would 4 hours smoke and then 12-14 hours cooking time,be about right for say 1 brisket,bout total of 12 lbs and a 4 lb butt roast? anyone have a great easy marinade?? thanks ,john

A super easy marinade is good old Wishbone Italian Dressing.  Big bottle from Sams or Costco.  When out of the baggie after 24 hrs in the refer, I dust mine with some rub and into the smoker at 210°.  At 4 hrs, change the water.  Cook to interior 185° then FTC for a min of an hour...I do two hrs.  Enjoy.

This is something to plan on about 12-14° cooktime - 4 hrs of it smoke.

I'm sure there are other great marinades out there, but Bill's advice about Italian dressing is right on the money1  Simple and effective! [:p]
