sweet and spicy ribs

if you are looking to do some ribs, try this take your ribs and take the membrane off, before you goto bed, put your ribs in a big container, and fill it up with pepsi or coke , use enough that it will cove all your ribs, throw in some ground pepper, an hour before your ready to cook pull your ribs out and cover with pepper and a bit of your favorit rub. and put strips of bacon on top of your ribs, let it sit out for about an hour at the same time warm up the smoker , smoke for 3 hours at 210 untill they hit 185. FTC for an hour and you have some sweet and spicy, ribs . the spice is up to you on what you put on. give it a try, will try to take a photo once the come out of the chest.

Ok, that has inspired me to try them now!! I feel as though I have a handle on the smoker by now, so I guess I am up to it.  At the very least, now I am extremely hungry!! Great photos.  Hope they were as good as they looked?

I have read about coke and or dr pepper as "the only marinade youlll ever need". I went to get pork ribs last night after reading your post,marinading them now in coke!!!!
Itching to fire up that smoker!!

I think this would work well on ribs.  Similar treatment on the brining/marinading side, plus an excellent glaze that would finish off the ribs nicely.

Gee, MW, I had no idea you were such a Pepsi fan!  What causes the heartburn from Coke?

BTW, I believe that Dr. Pepper is the same as Coke/Pepsi + black pepper . . .

Just finished serving 2 sides pork ribs, with the coke marinade and just a lite dusting of a spicy rub mix I made.
Best ribs we have ever had!!

you could use just about anything you want, i didnt have enough pepsi so i threw i can of rootbeer with it, dr pepper would be good then use pecan for smoke, the soda starts to brake down the meat to make it tender. fall off the bone.[:D]

All kidding aside.  The wife is wanting some ribs.  This makes good sence.  I do like a bit of sweetness to my ribs.  A few years ago I made a couple hams with root beer, good golly they were good.

<i>The heart burn thing.</i>  I really do like Pepsi over Coke, the thing of it was is that Pepsi gave much worse heart burn than Coke UNTIL I did the low carb thing and lost 35lbs and my heart burn went away no matter what I eat now.  Still it's Pepsi....Diet that is..

It's funny how as soon as I see a picture of something I haven't made in a bit, I immediately become ready to fire up the bs.  The ribs looked great.  I've never used a soda soak.  It's on the schedule for this weekend. [^][^][^] Thanks-

LOL.  Glad I wasn't drinking a Pepsi or my monitor would be wearing it.  On a serious note pineapple juice has a natural compound(I forget the name) that might tenderize better than coke or pepsi.  My wife was heating up some chicken and dumplings in one of our best pots over at my Moms a couple of weeks ago.  We use a gas stove and my Mom has electric.  Long story short she burnt the chicken and dumplings really bad[:(].  The wife tried everything to get the burnt stuff out.  Nothing worked.[:D]  I poured 1 can of coke in the pot and let it sit two days.  Needless to say the pot is now good as new[:D]

Seriously though, if you use fresh-ground ginger in your marinade, be careful how much you use. It'll turn meat into mushy jello if you use too much or leave it on too long.

Just a thought without having time to look it up--maybe Habanero or Manx can check it out--but I believe it is the very high level of phosphoric acid (a stronger acid than the acetic acid in vinegar and much stronger than the citric acid found in citrus fruit) in almost all soft drinks that tenderizes the meat (and dissolves tooth enamel!).

As for the ingredient in pineapple that tenderizes meat, I believe it is an enzyme called papain that is very effective at breaking down animal proteins.  It was first isolated from papaya fruit, hence the name.
