I'm planning on smoking ribs this weekend.  I would like to have them ready before company gets here but also want them to stay hot.  So I'm going to try FTC for the first time.

I want to put them in FTC 2 hours before we eat.  Can I completely cook them for 6 hours in the smoker and then put them in FTC for 2 hours without overcooking them?  Or will they continue to cook in FTC?  If that's the case, how long should I leave them in the smoker before putting them in FTC for 2 hours?

They will continue to cook a little in FTC, but I wouldn't worry about it enough to affect cooking times.

There is not as much mass in ribs as there is, say a pork butt, so they will not keep as hot as long.

It wouldn't be a bad idea to put some heated bricks or a stone in the cooler with them.

We use towels from our "dog colllection" - don't plan on using your FTC towels for much of anything else again.

I would second what FLB has stated and if you rap each rib in foil then stack them and rap the hole stack in a couple towels then in a warmed up cooler they should stay warn for more than a couple hrs

I wouldnt worry about over cooking them this way if anything they will be more tender and juicy.

May sure you bring the "cooler" inside to let it warm up to room temp.

Don't F/T and stick in a cold cooler.

Also like FBR and OU said the small amount of meat mass in the ribs isn't
going to raise the temp that much, but the warmth of the bones will keep
it warm with the right FTC.

One more thing is the amount of ribs you are cooking. If it is a bunch, I would
allow some xtra time on the cooking end of your time due to the fact that
sticking a large amount in the Bradley will cause it to work to get back up to
cooking temps.

Hope you have a great smoke and some great ribs.

Hey gang,

Thanks for the quick response and advice on the FTC.  I'm looking forward to treating our friends to some great ribs!
