any good suggestions for making a beef roast?  Thinking about smoking one for 2-3 hours with a rub of brown sugar, paprika, ect.

not even sure, package is marked as beef roast, about 2-3" thick.

Made some pulled pork for my boss at work and he wants to try smoking some beef ribs and a couple of beef roasts for tomorrow.

Maybe on 200 with cple hrs smoke and finish to the IT you like your beef.

Be sure you use a good thermometer and get your temp internally right... I prefer 165degrees...

how long do you think it will take, i am guessing each one is 2-3lbs and 2-3" thick.

Would 6 hours be enough?

Depending on your IT that you want to remove it at (say a medium of 150*) maybe 3 to 4 hrs.
