Cold Smoked Salmon

Just cured and smoked a batch of Atlantic Salmon  (cold smoked maple cured salmon) !

Boy does it taste good. not pissing in my own pocket but its the best damn Salmon i have ever tasted.

Cured for 24 hours in Salt, brown sugar , maple syrup and a wee bit of insta cure, then a pat dry and let the pelicle(is that how you spell it? )form in the fridge.

Apple smoked for 6 hours @ 23c

Used the forum to research recipes and tweaked it a little to suite my style, a big thank you to all that pass on there passion and secrets for us newbies to soak up    !

Silky smooth great color  and slices like butter ,will leave in the fridge for 24 hours before slicing up( if i don,t snack on it all.)

Have you ever thought about sort of copying that recipe you found on Youtube?

The maple, cherry and then apple.  Maybe an hour or 2 of each flavor.

That's what I was going to do if I can get all the puck flavors here....and when I get a smoker.   :D
