Moppin' Spare Ribs

It's my first go at spare ribs on the Bradley Digital.  Should I just rely on the smoke for flavor or should I add a little mop for moisture and/or flavor?

I've done them both ways.  After about three hours in the smoke your ribs will start to look like they are drying out.  At this point if you're going to mop you should start every thirty or forty minutes.  NOTE--don't use the mop until your ribs start looking dry on the outside or else you may loose some of your rub.  The main thing is to let the ribs do their thing and don't pull them out too early.  Your ribs wont be done until they meat starts to pull away from the end of the bone. 

If you do go dry all the way you can put a mop or sauce them at the end.  I really enjoy ribs without a mop.  I like the texture of the ribs.  The ribs won't be dry all the way through unless they get way way over cooked.

Pachanga's manifestoes are excellent.  While I'm still a newbie around here, I find my preferences fall right in line with his postings.  I've tried several of his recipes and never been disappointed.
