Smoking a chuck with a question.

I'm planning on smoking a chuckie tomarow and was thinking of either going with messy wood, or maybe jim beam oak. And then I thought I should ask everyone here what wood you all like when doing a chuckie...

Use what YOU like best.  Personally, I don't like mesquite for smoke - great for high heat grilling, but not for smoke (it's a noxious weed!).

Yes, use what you like.  I've done chuck roast twice and used oak once and pecan once.  I like both so the food tasted good to me ;D

Well I like messy with brisket, as well as hickory. They both taste great to me. Oak I have never used, but have wanted to try. I have read that oak is nice with beef, so I was thinking that I'd try it.... Ahh what the heck oak it is.

If it's beef and it's not brisket, I go with oak.

I like Oak or Mesquite on beef.


You just have to experiment to find out what _you_ like.

There really aren't any Taboos. You can use alder on beef and mesquite on salmon.

We kind of experimented with chicken. This weeks chicken gets oak, next weeks gets Hickory, etc..
