Everything looks good.

When smoking nuts and other very small items I use the fogmats screens from Yard & Pool. I use to use cheese cloth, but I would have problems if I wanted to stir the nuts half way through the smoke session. The food would stick to the cheese cloth and the cloth would bunch up. With the fogmats you still need to use strips of foil around the edges to prevent food from falling out the sides.

They need to make Frogmat boxes..    Like a low sided jelly roll pan.
