Dual Beef Brisket

So I picked up a Huge Beef Brisket at Cash and carry;
Trimmed the Fat;;
Researched all the different styles and recipes and stuff
so after a Mustard Slather and Home made rub; Did the Frig for 24 hours




Then 8 hours Apple Smoke:
A Guinness  and Apple Cider Beef Mop

and Look a very tasty Dual Brisket ( Texas Style )






I think I used too much Mop and the Bark was very wet, But am re-heating in Oven to harden the bark...

Just curious, how often did you mop? Briskit looks good.
