Cooking with the Bradley (Pastrami)

Hello all Eric here, I am a fairly new addition to the Bradley Smoker Family after receiving one as a gift.  I have used it a couple of times to start learning.  I am now planning to try some Pastrami from a corn beef and have been reading through the different threads.  I have a question about some of the abbreviations that I have seen particularly FTC.  Can someone tell me what that means.  Also is it possible to cook a regular Brisket at the same time I am doing the pastrami?

F=foil T= towel C= cooler. When you take the meat out of the smoker you can FTC and then the meat will suck the juices back into it to make it really moist. Works really well on pork butts and briskets.

Yes you can cook pastrami with regular brisket. The only thing you should avoid is chicken with other meat. If you do, put the chicken on the lowest rack.

Hey classicrockgriller, I seen a few pic's of your new smoker. Did you have this custom built or did you purchase this somewhere? I own two SS Bradley's and was getting ready to purchase a 6 rack but I'm not a big fan of the digital smoker generator but was wanting something a little bigger and in one pic I noticed you had the manual smoke generator.

I talked to someone at Bradley Chicago warehouse a few months ago and he informed me that they were coming out with a commercial unit, is this it?

Eric_T, Welcome to the forum. You are going to love the pastrami from a corned beef. I did it and it was so awesome. Corned beef is pretty expensive here but I think next time I will get a brisket and make it into corned beef, then make that into pastrami.
