temp not hot enough

HELLO ALL.
      THANKS FOR THE EARLIER ADVICE ON GETTING THE SKIN OFF THE BABY BACKS, THE PAPER TOWEL WAS THE TRICK.. I STARTED OUT WITH A 200 DEGREE SMOKE FOR 3 HOURS THEN TOOK RIBS OUT TO WRAP THEM IN FOIL BUT NOW I CANNOT GET MY BRADLEY OVER 225.. I LIVE ON THE OREGON COAST AND THE TEMP IS ABOUT 65 TODAY AND THE SMOKER IS INSIDE NOT AFFECTED BY THE WIND. I TOOK THE RIBS OUT TO MOP THEM BEFORE I PUT THEM IN THE FOIL AND THE UNIT PRE-HEATED TO 275+ NO PROBLEM. THEN AFTER I PUT THE RIBS BACK IN IT WOULD NOT GO ABOVE 225 AFTER 1 HOUR??
 ALSO DO YOU HAVE ANY RECOMMENDATIONS FOR A TEMP PROB.. BRAND, MODEL AND WHERE TO BUY ONE?
  ONE MORE QUESTION.. I KEEP GETTING EMAILS FROM THE FORUM, AFTER I REGISTERED.. HOW DO I TURN THAT OFF?

Raven,

There is a key located above the shift key on the left-hand side of the keyboard. It is labeled "Caps Lock". Please tap it once for us.

Why would you want the smoker above 225? It's "low & slow" & that's what makes it taste so good.

Regarding the emails, go to your post & uncheck the box that says "Subscribe to this post". That will stop the emails.

The reason Chez requested that you stop typing in all Caps is it is considered bad forum. All Caps normally means a person is very angry and is yelling at someone. Which of course this is not the case here. [^]

I cannot help in directing you to a probe as I don't really use them. However, if I'm not mistake I believe most use the  Maverick ET-73 model and run the probe wires through the vent. It is a dual probe model. One for the meat, the other for the box itself.

As far as the heat of your box are you using the door's thermometer? If so be advised that many of those are not correct and some have really been off in the reading. My first one was off by over 30 degrees!

A simple test I used to see if my unit was heating to its maximum was to place the unit in a dark area. Without the generator creating smoke I opened the door and as I slid the control handle from left to right. I watched the color of the heating element. If it goes to bright red/orange in color when slid all the way to the right than it is a safe bet your unit is working correctly.

Chez does make a valid point concerning cooking above 225F. Many of the items I smoke are well below that box temp. I generally only go to 225-230F when I'm doing bacon wrapped chicken breast.

Leaving your smoke generator on during the whole smoke is also important. (In case you aren't.)  Even after smoking it adds degrees to the cabinet.  I rarely go over 205-210° cabinet temp, except as OLDS describes to crisp up skin a bit or hasten the cooking of wings when I ultimately will finish outside the cabinet on the grill.

Hi Raven 1,

I (along with many others) use the Maverick ET-73 and really like it.  It's less than $40 and it's main drawback is a firaly limited remote range (the unit says 100' but that's lie of sight and it can be as little as 30' if it's going through walls, metals, etc.

Several members swear by the Guru/Raptor/Procomm4 system that runs $300+ depending on how you configure it, and makes the BS virutally "set it and forget it".  It's expensive, but if it's within your budget, you should search the forum for some reviews on it.
