Smoked Turkey

Well I've been busy just finished smoking a 12 lb turkey. 5 hours of Apple wood @ 225Deg. for total of 10 hours to a IT of 175 deg. out ambient air temp 42 deg. the turkey was smoked in a cloth bag hanging from the open vent. This is sure a lot easier now with the help from other members of this forum and my Auber Duel probe PID, and special thanks to Gus for all his help. Here are some photos. Before smoking
