just want to know after im done to they have to be cooled down any certian way

In the smoker till IT 152* then ice water bath till IT of 100*.  Prevents the continuing of cooking and also shrinkage.

Depends on how much smoke you like and moisture content.  I like 1 hr of smoke and anywhere from 4 hrs to 7 hrs to reach the IT.
