It started out as a simple smoke but.........

It ended up more complicated.

Started with the idea to make some simple smoked chicken breasts. Nothing fancy. When I went to the store for the chicken I saw the asparagus and thought that would go good with it. Then I went past the pistachio nuts and thought about Seemore's blazing pistachios. Picked up two pounds of them. Went past the baked bean section and thought about adding some of those. Picked up a can. Got home and as I was putting things together the wife said, "Hmm - we have this bag of sweet peppers, can you do something with those."

Must pause and put in a word to all the newbies. --- Believe it or not, there will come a time in your Bradley life when the significant other will stop complaining about all your toys tools that keep showing up on the doorstep and start asking what else can you smoke.
Enough with the public service announcement and back to the cook.

So I dug out some smoked gouda cheese, cream cheese,some green onions, pepperoni,and garlic and made a stuffing for the peppers. Unfortunately I didn't have any bacon to wrap them in, but sometimes you just have to overcome adversity.
Here is the cream cheese based stuffing

Didn't have toothpicks so I used the pointed end of some woodskewers to hold the pepper tops in place. Was afraid they would run out so I took another disposable pan, cut it in half and made some holes in it so the peppers would stand up. While I was digging in the fridge I found a couple of ears of corn. So I soaked them in water for an hour.
Here are the peppers and the corn ready to go in.


I was going to put the nuts on the frogmats, but was concerned about them rolling off. I thought a pan would block the heat. So I took a couple of aluminum throw away pans and cut out the center.

The "shells" were too long for the rack so I cut them in half, overlapped them and put the mats in the center.

Had about 6 cups of nuts. Used Seemore's recipe for the coating but used 1/3 of the salt since they were pretty salty to begin with. Added some spicy cajun garlic sauce.

Coated and in the improvised mat holder. Used two racks.



Took the chicken and coated with some of the Amish jalapeno jam I got in a trade with Nepas (thanks again Rick) and added some gunpowder rub. Put the beans in a pan and added some homemade BBQ sauce. Here they are ready to go in:

So here is everything loaded in the OBS.

Will take the nuts out in about an hour and add the asparagus.

All done and devoured (except I still have some pistachio's left)

Nuts done and in a bowl. I was hooked on pistachios before, this just made it worse. They are delicious.


The rest of the meal. For a simple meal it was great. Chicken thighs were very moist and tender.


Now to go drink beer and eat pistachios.
