Cheese to finish the weekend

What a weekend.  Two racks of ribs Friday night then a butt and brisket overnight Friday for lunch Staurday and dinner Saturday.  Then today, cheese.  It was only 45 degrees today in N. Texas.  Had to run to Sam's and buy a bunch of cheese as I did not get it done during the winter.  To top it off - Bin Laden is dead!!


Tillamook pepper jack (two bricks), Tillamook Sharp Cheddar and a block of Gouda


Out of the smoker after two hours of Apple.  Temp never got above 80*


All sealed up for a few months.

I had never tried Pepper Jack cheese -smoked or otherwise- until a few weeks ago when I smoked up a bunch. Love it with a glass of bingo!!

Now !!! that is some good lookin cheese, and I really like the pepper jack, I guess we are going to have to smoke a bigger batch, the last batch did not last very long...lol

Mmmm mmm mmmm, smoked pepperjack is one of the best in my book.

I agree.  I plow through the pepper jack - hence two blocks smoked this time.  Oh yeah, did 10 lbs of Penzy's breakfast sausage last night also!
