Cut slab or not.

Does it take away from the flavor of the baby backs to have to cut the slab in half prior to cooking? They wont fit, but I have the sense that more open ends while cooking/smoking may not be so good?  Im very new to this so any and all advice is appreciated.

Another way is that you can loosely coil them, stand them on end and smoke/cook them vertically. If they won't stay coiled by themselves use one or two skewers to keep them coiled. You can get two full backs slabs per tray.

We cut ours in half to vacuum pack them, it's just my wife and I and we only eat 1 rack between us.. there was a day when I could eat a whole rack but not anymore...

I always cut them in half and they come out great,  I put the less meatier half on the top rack
