DIno Bones & Jerky

Yesterday I saw Dino bones on sale so I picked them up with a small eye of round roast. Took the Dino bones and vac sealed them with Jan's Rub on them. They went into the slow cooker @ 132 degrees F for 12 hours over night.

After the 12 hours I drained off the juices and saved it for other things  ;)

The eye of round got sliced thick, at least to me. I than used cure #1 and some cracked pepper and garlic seasoning I had kicking around and went into the fridge over night.

Everything is in the smoker. The Dino bones will get 3 hours of smoke at the low temps (130F) I use to start my jerky at and than get pulled for dinner tonight.

Doors always open  ;)

Dino bones after three hours of smoke. Going to use the juice from the bones when I reheat them for dinner.

Dinner is over and all I have to say is WOW   Them things are GOOOOOOD. The smoke took to them very well. Had them reheating in a bread pan in the oven with the juice I saved before. Very tender and smokey. Will be doing this again.

Jerky is done. About 8 hours to finish them off. Two racks became one by the time they where done.
