I got a bunch from the a farmer a couple of days ago. Im thinking of smoking them and then throwing them in the dehydrator. Has any one tried this??

If they are big enough to stuff, you might think about ABTs.  I like to smoke mine first, then stuff and wrap and finish on the grill (or oven).
The only real stumbling block is fear of failure. In cooking you've got to have a what-the-hell attitude. Julia Child

This is a good idea depending on how many you have.
if there is a large quantity,
Smoking/drying will work just fine. you can always vac seal in small quantities and store.

Some people are like Slinkies... They're really good for nothing.
...But they still bring a smile to your face when you push them down the stairs.

I don't mean to drive traffic away from this forum or anything, but you might want to check out http://thehotpepper.com/ if you like to walk on the spicy side of life.  I go by "Stemwinder" there, but it's been a while since I've posted.  You might find some ideas for things to do with your peppers.
