I have added fresh cracked black pepper to the brining process then smashed in a heavy dose of rough ground/restaurant style black pepper prior to running it through the smoker.

Gotta agree with Chris on this point.  Since this is your first time at smoking bacon I would suggest you make it "as is".  Chris and I are pretty much on the same page about curing/smoking bacon with the exception of the temps of smoking and that's just a personal preference thing.
