9lbs Butt DONE in 11 hrs

...okay, 13 hrs with FTC   ;)

Every time I've smoked a butt before it's ALWAYS taken 18 (and a couple times over 20) hrs to hit 195.  Before I'd cook at 220-225 for the entire smoke.  Wanted to try something different this time.  Have a dual element OBS and Auber dual PID.  After a warm up to 250, I set a smoke cycle for 4.5 hrs at 225 and put in 4 hours of pucks (1 hr hickory and 3 hrs apple).  Gave the extra .5hr to make sure the last puck burnt through.  Then the next cycle I pushed it up to 245 until the IT hit 195.  Only about 6.5 hours at that temp before IT hit 195. It seemed to briefly stall at 180, but nothing significant.  Pulled and wrapped for FTC another 2 hrs before serving.  Turned out GREAT. 

This is my new permanent butt method from here on.  I guess if you don't have a dual or 900 watt element, you could smoke in the Bradley, then finish in the oven at 245-250.
