Does anyone have a recipe for curing and cold smoking fresh tuna?
Any idea please.

If you are wanting to cure and then cold smoke tuna I would think you are looking for something along the lines of a gravlax.  If that is indeed what you are looking for, there are lots of cold smoked gravlax recipes both here and the recipe website, www.susanminor.org

Gravlax is a Scandinavian salmon preparation usually cured with salt, sugar and dill. Some folks then smoke it but then it isn't gravlax any more.

I think I've seen that at bagel restaurants.

Just be glad that there is a new recipe for gravlax.  Probably started with the Nords in the middle ages.  They'd come home after catching a few salmon, lightly salt them and bury them on the beach a little above high tide - then come back some time much later after a little fermentation.  yum.  gravalax in Scandanavian means "buried salmon"
