Gluten Free Smoked Meatloaf

This is the second time doing smoked meatloaf, if you love meatloaf, you will love it more smoked, if you don't care for meatloaf, this recipe done in the smoker will change your mind.

2 lbs grass fed 85-15 ground beef
2 small onions minced
2 eggs
1 cup gluten free bread crumbs
1 and 1/2 teaspoon Byron's butt rub, or your favorite rub
1/2 cup ketchup

Put it all in a bowl and mix with your hands.

Divide the mix into two loaves on your old baking sheet.

Put the baking sheet in the smoker on high, I'm doing 2 hours of cherry smoke and cooking until internal temp of 170.

Here are beginning pics, takes about 15 minutes to prep and get in the smoker, so definitely preheat before you begin putting it together.

Finished product, serve with some ketchup or your favorite BBQ sauce, I like some Famous Dave's Sweet & Zesty.

Looks awesome! I've never done a smoked meatloaf but I'm going to have to try that recipe.

Ka Honu

Looks good but might look even better with a bacon weave (which is also gluten-free).

That's the great thing about meatloaf, do any recipe you like, I will definitely be wrapping in bacon next time.
