Looks interesting, I myself would like to try prosciutto, looks like there is plenty of info out there , Poli site has a lot of info on dry curing, check this out http://www.xmarks.com/topic/charcuterie?p=152734058&cid=gz

If you want to do prosciutto you might want to look into Cooking by Hand by Paul Bertoli.  He is a master at it and gives detailed instructions along with some pics (pics not so great, but they help).

My coppa is doing well... Developing a nice mold on it and seems to be drying ok. I'll get a pic up with it's progress... Need to weigh it to see where it's at.
