Smoked Sockeye Salmon - How I spent an Autumn Afternoon

A work-mate gave me a couple of beautiful Sockeye (King?) Salmon's on Friday, so the plan was launched to smoke them on Sunday. I spent a beautiful Autumn afternoon doing yardwork, sampling ales and smoking the salmon.



I Fileted (sp?) them on Saturday afternoon. Only my second time at fileting, so not the prettiest job but not bad either IMHO



Out of the brine Sunday morning (Kummock's of course) and air drying with the help of a low speed fan



Into my very well seasoned smoker



Final product.. Tastes fantastic. I'm just enjoying some on a cracker with local cream cheese and capers. Cheers

mws: A gift of two salmon, sampling beer whilst they're are smoking, then...........crackers, cream cheese and capers, doesn't get much better than that!

Looks fantastic! great pics too!

Now i'm hungry again!  ;D
