Cold Smoked Shrimp

I purchased my BDS about a month ago, the only regret is that I wish I had bought one years ago. This unit rocks!! I really want to thank everyone on this forum for there vast amount of knowledge!! I have spent a lot of time reading posts and have found them to be very helpful, this is a great group of people!!

My wife and I both love shrimp and have smoked shrimp several times and we have always loved the results. But, in reading some of the posts on this forum I discovered cold smoking and being from South Dakota figured I was in the perfect time of year to try this and the result has been the best shrimp ever!!! I cold smoked some shrimp today, it was 32 degrees for a high temp. So, I turned on the smoke generator thinking it would heat up the smoker to 60 degrees, but it would not go above 35. I then turned on the oven and got the smoker up to 120, turned off the oven and let it cool down to 70 before I put the shrimp in.

My brine i used was:
1 quart water
1/4 cup salt
1/4 cup white sugar
1 tablespoon white peper
1 tablespoon galic powder

I soaked them for 20 minutes, then did a quick rinse and put them in the frig for an hour. I then smoked them with alder for 80 minutes. We then pan fried them and were amazed at how good they were!!

I also cold smoked about 10 pounds of cheese at the same time. Some colby, swiss and colbyjack. I sure hate having to wait while the cheese cures before I can taste it!!

Tomorrow morning the turkey goes on the smoker as well....smoke on!!!

Welcome to the forum, intrudersd. The shrimp sounds great! Don't get impatient on the cheese, it will blow your mind in a week or so. It gets better every day. Good luck with the turkey and Happy Thanksgiving!

That sounds really good - i'll give it a try one of these days.  Good technique to preheat the smoker and then turn it off to get the temp you want. 

Where in South Dakota are you?  We lived in Spearfish for 8 years...

Hi and welcome intrudersd, as a seafood lover, i have to say that the shrimp sounds great!

Lately i've been experimenting with crab, i've cold smoked some claws with good results, i bought a big batch of them (pre-cooked) and have been having a great time "testing"  ;D ;)

Thanks for the warm welcome everyone!! We are in Sioux Falls, although the wife is from
Sturgis....love the hills.

LilSmoker...I never would have thought about crab, but sounds like a heck of an idea!! We had crab legs while camping in Glacier Park this summer.....we did them on the camp stove...should have seen the loks we got!!! Some of the best crap we every ate.
