Hugh Fearnley-Whittingstall..... Fish.

Can thoroughly recommend this book, typical HFW although it will probably be of more interest to people on this side of the pond as it talks predominantly about British species of fish. However it would not be that difficult to substitute species of fish in your area.

There is also a lot of general interest stuff including smoking.

I bought it from River Cottage and availed of the free online Catch and Cook course on offer, however it can be bought cheaper on line (£15 - £18  e.g Amazon) and Waterstones bookshops currently have it on half price offer.

One of the guys I work with is off down to Dorset this weekend and has a cookery course with HFW in person on Monday at River Cottage..... couple with that he has just got back from Argentina and has been regailing us with tales of how superb the meat and seafood is!!

Grrrrr....... extra duties for him when he gets back to work!!  ;) :D

Hi T2, It is a general fish cook book but with a significant chapter on smoking fish including methods, humidity issues, home made smoker design etc plus recipes.

This link gives a brief synopsis, as I said previously the fish mentioned are predominantly British species but with a bit of imagination species relevant to different countries could easily be substituted and there is a good shellfish section..... lobster, crab, scallop, mussel etc for example which are pretty much universal.
