More Super Bowl brisket

I too smoked up a brisket for our Super Bowl party.

Started with a 11.5 lb packer cut brisket, that I had to trim a bit to make it fit into the bradley.  Most of the briskets I can find locally are anywhere from 10 to 14 lbs, and damn near impossible to fit into my Bradley without doing a bit of trimming.  If they are 10-11 lbs or so I can usually get away with trimming a bit off one end.  If they are towards the larger end say 12-14 lbs, then I usually separate the point from the flat and do them that way.  I've had great results both ways, but separating the brisket definately results in less cook time overall.

This one I was able to fit into the Bradley whole, with a bit of trimming.  Considering my friends that were going to be attending the party and eating the fare, I decided to use a rub that I ordinarily save for ribs/butts to add a little kick to this brisket. 



My chocolate lab, Luca Bella, approved!  She especially approved of the getting the trimmings!!



After 5 hours of hickory in the Bradley, I pulled it out and boated it with a bit of beef stock/worst/whiskey.



and then into the oven it went until it hit 192F IT.



Sorry, no pics after slicing as I was too busy stuffing it down my throat.  ;D

The game ended up being pretty good too!  ;)

Haha, yes, my wife is italian and insisted on giving the dog an italian name.  ::)
