Newbie here. I have a bag of frozen red snapper fillets that my brother vacuum sealed individually. Are these OK to put in the smoker. If so, how long should I do it for and how long. Do i need to brine them and in what. I cant seem to find anything in the forum for this, but then again i am a newbie. I live in a small town and only have access to apple and mesquite for now. I have read that alder is best for seafood. Any help would be greatly appreciated.  ;D

Here is a recipe for it from over on the recipe site. I've never tried it before so I can't help you any more than this on it.

Can't say I have ever "smoked" red snapper - grilled it a number of times.  Usually rub some EVOO on, then sprinkle on something (I usually use a cajun spice mix then grill.  I've smoked other fish using the same method - sometimes, I will baste - or mop the filet to help keep moist!
