Trimming Brisket

Well, everything I hear so far is good.  I'm glad there is little difference and I don't have to worry too much about the toughness of the finished product.  As for the weight, I didn't have much choice. I could have purchased the trimmed 8 or 10 lb  flat for about 34 bucks but I chose the 17 lb packer for about the same price.  I'm going for broke and smoking it all and what I don't  use I'll freeze.
