NEPA Smokeout Sausage

Today i made up 20 lbs of pork sausage for the smokeout. I stuffed into 34mm hog casings, bagged into ziplocks and wrapped with freezer paper. Going to freeze until t's smokeout time  ;D




All zip baggied ready for paper.



I hade to go buy another roll of paper  :o

That's a serious paper dispenser. Another thing to put on the Christmas wish list  :)

Going to be a feast  ;D  I gots a new toy i am going to use for the sausage. But i aint going to say what it is yet  ;D

That looks great Nepas, very professional looking job.  Is it your own seasoning or a store bought mix?

Just my own mix, salt, pepper, garlic, and a pinch of sage.
