Caney's Cooking Law - What are yours

This oughtta be fun!

Everybody has what hard and fast rules for eating, cooking, grilling, barbecuing.  Here are mine (or at least the ones I can think of right now).  What are your's???

Caney's Cooking Laws
Ultimate Supreme- Thank God for the provision!
1 - Jalapenos and Hot Sauce go with EVERYTHING!
2 - One can never use too much spice (well almost never).
3 - One can never use too much garlic - NEVER!
4 - Salt and Pepper your meat well before grilling or smoking.
5 - Pork fat rules (I stole that one - but important nonetheless!)
6 - Sausage and/or bacon should be an ingredient in more recipes (related to 5, but as I said "important").
7 - Use the Cook's share wisely!
8 - EVOO - need I say more?
9 - If it's well done throw it out to the possums
10 - Five second rule is always in effect, except in the bathroom!
11 - Chicken should be either Southern fried or smoked
12 - Mop, Mop, Mop (and not the floor - duh)
13 - Don't just go with the flow - TWEAK
14 - Just because you can, doesn't mean you should!
15 - Share it like it's somebody else's
16 - Catfish - it's what's for breakfast!
17 - If you aren't sure you like it add more spice and cheese!
18 - Salt may be the spice of life, but black pepper is the "soul"
19 - Is it wrong to lust after ice cream?
20 - Boiled meat = NoNoNoNo!!!
21 - Grits is good
22 - Cold pizza for breakfast will put hair on your chest
23 - The doctor told me to eat more veggies, I did - carrot cake, zucchini bread, 'rhubarb pie, and pumpkin pie.  He didn't give me a
       chance to tell him that I found out that chocolate is a vegetable!
24 - One cannot go through life without enjoying Pesto
25 - Beans and chili go together like uuuhhhh - just shoot me!

Don't use a pre-packaged rub/sauce/whatever when you can make your own.

no MSG or any other ingredients that require a food science degree to understand / pronounce

Good rules Caney, may display them somewhere.  I would add if it's fresh it will taste better.  If you raised it, caught it, shot it or butchered it yourself it will definitely taste better.  If you share it, it will taste even better yet.  As my 6 year old, beautiful, smart daughter says, I add love when I make it so that you can taste the love when it's done.  Can't think of anything else I could add to those words.

Ok...I'm gonna be contrary here...NEVER TOTALLY FOLLOW A RECIPE...get an idea/recipe...and then take it to the next level....  :)

Oh Caney....not really good with #21.... love #22...(although I don't really want hair to grow on my chest, think Bob could have an issue with it...)!!!!! I'll leave it at that!!!  ;D

LQ, I feel the same way about recipes as you, except when it comes to sausage. I now follow the recipe to the letter and decide what I want to change. Much safer that way when dealing with ten pounds of meat. My usual technique of adding more garlic, paprika or heat does not allways work to my liking.
