Hello every one I am new here. I am looking at buying a Bradley smoker. I do have a home built off set smoker that i use now. What I want to now is this. Can these bradleys do sausages and summer sausages. I can't seem to find much about making home made sausages on here. There is nothing in the recipe section on here . Can some one help me out with this topic. I can't use MSG so is there some thing else to use. Colin

Hi Colin,

Welcome to the Forum.  There are folks here who have amazing experience with making and smoking sausages of all types.  I, however, am not one of them [:D].  If you do a search for "sausage recipes", matching the exact phrase, you will see lots of info and links to info on this topic.  Don't know if your MSG question is in there, but I bet someone else can answer that one, too.  Good luck, and let us know how you do! Cold Smoke

Welcome Farmer and fellow 'Toban! I have just started making my own sausage but have yet to make a farmers sausage. I have made smoked brats and german sausage (kit from Hi Mountain)- they were awesome[:p][^]. There are a few here that seem to have extensive sausage making info and experience. It might take a couple days before they pipe in but I'm sure you'll get the info you're looking for. The Bradley is an excellent smoker and I'm sure it'll suit your needs and produce a superior product.

Thanks Cold Smoke. What part of Manitoba are you from. I now going to the BS will be different, but I don't have to get up through the night to put more wood on the fire. Colin

I'm from the "Big Smoke"- Winnipeg- home of the best tasting smoked fish- the goldeye. Get the BS-you'll love it. I'm sure you can get away from MSG in making your own sausages...

I have had good luck smoking a few types of sausage. Below are a couple of pictures.





  Some of the seasonings available contain MSG and some don't. For example I just checked a can of High Mountain Bratwurst seasoning that does not. The seasoning I used for the summer sausage was from eastman outdoors. This one DID contain MSG. You will be able to find seasonings premixed and recipes that you mix yourself to suit your needs. I usually use some type of premixed seasoning and than add a few ingredients that I prefer. ie:mustard seed, garlic pwd, onion pwd etc....
I think you will be very happy with the efficiency of the Bradley. It did not take long at all for either of the items that I posted.
