Chuck roast

Had a couple of chuck roast that were begging to have smoke put to them!  Simple seasoning of coarse salt and pepper.



Into the smoker @ 220 for four hours of mesquite smoke (Duh!   ;D )  and then into the oven @ 200 for an overnighter (forgot to get pics of this)  Here they are pulled out and piping hot ready for some FTC!



After 5 hours of FTC, getting sliced up!



Plated with ranch beans, tater wedges, buttery toast and some ketchup for the wedges!

That looks great! Was the oven time done covered? With any moisture?

Ran those pretty much like I do a brisket, oven time was right at 15 hours (could have gone less)  in a foil pan covered with foil and just a splash of AJ.

Those look great!
I think chuck roast is one of my favorite cuts of beef.
They have just the right amount of fat.

7 bone is my favorite but I like them with the tendon in it.  Growing up, the tendon was a treat and we called it bubble gum.  Actually, that was about as close to bubble gum as we would get during some really tough times financially.

Boy, does that ever bring back memories. That was half a century ago  ;D

Hmmm... I have one of those in my frezzer, maybe I should thaw it and smoke it this week-end.
