Hi all...  I'm a new guy from Seabrook, TX..  Definitely not new to cooking/smoking, but I'm starting to refine my interests a little but now that I'm done with a career change.

Bradley Smokers came to my attention recently when I began to investigate sausage and cheese making.  As far as what I plan on doing, I want to start actually making some sausage..  I have a smoker already (the Kamado and an old SWOCS), but the ability to do cold smoking is not something I can do easily with my current equipment.  I was thinking about getting a smoker/adapter and adapting it to my SWOCS so that I can do volume cold/hot smoking of cheeses and sausages..

For those who don't know what a SWOCS smoker is (since they aren't made anymore), its a fairly standard smoker box design that uses an enclosed propane burner design to provide heat.  The propane burner is inserted into the bottom of a sealed box which sits inside the smoker itself (propane and combustion gasses never enter the smoker itself).  Smoke pellets (like used in a Traeger) are placed on top of the box (inside the smoker) for smoke.  All in all this is a great rig, but its difficult to control the temp.  You can see a pic at http://bbq.netrelief.com/images/swocs1a.jpg

Welcome sominus.  I believe you would be able to adapt the cold smoke box and a smoke generator to the unit you have.

Welcome sominus.  As gizmo said, there should be n0 reason not to make that mod to the SWOCS to cold smoke.  Hardest thing would probably be how you would get the smoke into the SWOCS - i.e. cutting a hole in the side to mount the hose from a cold smoke box.  As far as hot smoking with the smoke generator, it doesn't produce that much heat.  The main heat in a Bradley comes from an 500 watt heating element mounted in the cabinet, but controlled by the smoke generator.
