Hi!
We smoked a rack of baby backs, and three racks of spare ribs today.
On all of the ribs we covered with yellow mustard.  On the spare ribs, we seasoned them with 10.5's favorite, Cookie's Flavor Enhancer.  On the baby backs, we put Ice Man's oinker rub.
We put in the smoker:

Tasha supervised, sort of:

Since we had no apple juice in the house - my BAD!  :-[   - we mixed our olive oil with some Port wine that we had in the 'fridge.  WOW!  What a twist!

The ribs had a very subtle flavor of that Port.  They did not even need sauce on them.
Once the spares were done - the baby backs had to cook a little longer - we pulled them and put them in a roaster along with a little more of that wine/olive oil blend:

For dinner, we enjoyed the baby backs along with West Texas Smoker's mashed potato salad and Corky's cole slaw:

The cole slaw recipe is on the Tried and True Recipes link.  By chance could this potato salad be put there?  Mrs. spent an hour yesterday looking for it on the Forum.   :'(

Ok You could have sent some my way would have been better than the NASTY food served at the company Picnic. By the way how did you like the Cookie's on your ribs?
Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Those ribs look great, surprised the spare's were done b4 the baby's.

That tater salad looks good also, would like to see a recipe for that, not much of a cole slaw kind of a guy but will be willen to try.

Hawkeye, Tasha is a true Diva.  She would NEVER get her paws dirty by getting in there and doing the work.
10.5, the Cookies was GOOD!
OU, I will tell you that I went under Meat, and went back to 01/04/09, I think it was.  WestTexas did some type of meat - tells you how focused I was on the dang potato salad that I can't even remember the main course - and there is a very nice pictorial to go along with it.
Among the ingredients are eggs, diced onion,
pickle relish, pickled jalapenos, hot pepper sauce, garlic, and several seasonings.
I think it was 2 pounds of potatoes.  I believe everything else was to taste.
I am not a big cole slaw fan either, except of this one.  It is very good!  You can find the recipe on the Tried and True recipes link.

Those are some fantastic looking ribs!  My wife makes homemade potato salad (a recipe she got from her mom).  That salad, some corn on the cob and ribs - OMG - what a meal!
There is such a thing as BBQ in Nebraska!
