No smoke but great pork roast

Ka Honu

Grilled an old Food Network favorite tonight, Pork Ribs and Roast with Mojo (recipe here) ...




... along with some grilled fresh corn and pineapple (I am in Hawaii, after all).


Only things I changed were using a little less salt throughout and taking the roast off the grill at an IT of 135o.  It came out perfectly - give it a try.

I might just have to have you send some of that sweet corn here. I will compare it to our sweet corn and let you know if it is GOOD or not.

10.5 - My niece's husband is from Sioux City and he swears by our corn (but, to be fair, that could be fear of having to go back to Iowa to get their corn).

OBTW, the leftovers from this roast will make awesome Cuban-style sandwiches, especially with some of the smoked cheese that's coming out of "storage" today.
