inside of a bag

not any bag..brown paper bag (Thanks Nepas). Smoked 4kg today. I noticed Jerky tastes better on the second day, but problem is only little left. However this time is an exception, was too hot today, so bag is 80%  full :)

Very nice looking jerky Telman.

Not sure how NePa stores his after the initial bagging, but I have found that if I keep the jerky in the fridge in the brown paper bag, it dries out more and becomes brittle.  I use that as an advantage for pieces that might have been taken out a little early and could use some more dehydration.

Gizmo, that is a good point. I noticed that too, I put brown bag inside a zip bag. I know I should be storing in a glass jar or a plastic container, I am not too worried at this point since jerky does not last too long in our house  ;D.

I hear ya there.  But when you hide a small bag in the back of the refrigerator and forget about it for a couple of weeks, you will see the results.   ;)
