OK - so I juts bought a "used" OBS...$150 and it was never - NEVER cooked in!

So....now that I got a good deal...I am looking at Yard and Pool (located just north of me) and planning on putting in an order of briquettes, the jerky racks and....???

As with all my "hobbies" er obsesions, I like to get all the tools right away - no sense in monkeying around...so as I make out my shopping list, I ask all you seasoned users what things have you determined are the must haves?

I have a propane smoker as well - but when I make venison sausage and jerky, I make large batches...thus the reason I wanted another smoker...and I have wanted a OBS for ever anda  day.

My thoughts...
- A set of the jerky racks (so I can double the smoking capability for things like sausage and have the ability for shell fish and jerky)
- 120 of mesquite and hickory
- 48 of alder, cherry, and Jim Beam
- Set of 3 bubba pucks

Anything else?  I am eying the cold smoke adapter...but wondering if I can rig something much cheaper...anything else to add?  I am wondering if I should get two sets of the jerky racks..I see they have the non-stick sheets - but for the couple bucks more, I could get actual screens...any thoughts on that as well?

I don't have the jerky screens but those that do say forget about them the coating peels off. I would suggest an additional set of racks and the non-stick sheets I have the sheets and they make cleanup much easier.

Bryan at Y&P is a great guy, he will help steer you in the right direction.

I would get the hi-temp screens from Y&P instead of the jerky racks, also you will need/want a temp probe, like a Maverick.

OK - thank you so much - exactly what I needed to hear...no sense making mistakes or errors others have made...Lord knows I make enough of my own!  I learned long ago that there is lots of gear out there (trust me its stacked up in the shed and garage) that sounds good and looks promising...but in the end falls short. 

non-stick sheets and an extra set of racks...anything else?  And indeed - we are definitely buying from Y&P - they are close to "local" as I can get with good prices, and anyone that is active supporting the community will get my couple extra bucks compared to 100% internet shopping.

That's where you "get what you pay for".  I have an older Maverick that is spot on perfect.  And I just bought a 'cheapo' one at the store on 'clearance'.   Worthless.   Room temp, they were identical.  At 140 degrees, they are 8+ degrees apart.   Using it as the cabinet temp probe during preheat, at 225, they are *30* degrees apart.   (they were side-by-side, both stuffed in a wad of foil)

Have you considered a PID and maybe a cover for the smoker if keeping it outside.
