my first pulled pork

Just completed my first attempt at pulled pork, it turned out great if you ask me! Also first smoke with the Mavrick, it worked perfect, had the remote receiver right next to my chair and it never lost signal once. Here is a picture of one of the pork butts before smoking, after rub and overnight in fridge.

Smoked it for 5 hrs, then another 2 hrs in the smoker uncovered, all at 225. This is what it looked like coming out of the smoker.

Then each into it's own hot tub, a little apple juice and cover with foil, set the oven at 220, in for another 3.5 hrs. At that point in IT was about 205, kind of surprised me, I expected them to take longer. I would have left them a little more but I wanted to get to bed so I FTC them til morning. I laid awake anyhow, half because I wanted to try them and half because I was second guessing myself on taking them out. This is how they looked in the morning.


They pulled apart perfectly! Not one bit tough.

Overall I am super happy with how they turned out. All the meat is now back in the fridge, we are having a party Monday evening and I'll reheat it for that. Planning on doing half with BBQ sauce and the other half plain. Also decided to do 2 more, would hate to run out  ;D. Local store has them on sale for .99/lb so they are pretty cheap.

Thanx Ky! I'm going to have to give brisket a try I guess, after those other two butts that is. I might throw some hot dogs in the smoker Monday too, I thought some of the kids might like them and it seems like it would be a good way to keep them warmed up.

Just kidding you...

You might want to make sure when you take the temp, that you stick the probe in multiple places, if you hit a fat pocket the temp will be higher.

One thing I will mention about the temp, on my Auber PID I had it set at 220, which stayed pretty consistent once recovered, I also had preheated to 250, my Maverick was reading about the same as my PID, within a couple of degrees, but my digital readout on my Bradley was reading 240 to 250. My temp probe for my PID is the wall mount, mounted up high in the box per the instructions, the Maverick probe was connected below the top rack. So both pretty high in the box compared to factory installed temp probe. Next time I think I'll smoke at a little lower temp, set the PID at 200 or so. That may have something to so with it finishing earlier than I thought it would. I did check the temp in both butts and multiple locations, and it pulled apart perfectly so I'm confident the IT's were correct.

I have had some take 20 hr and some take 12 hr to get done

I think it all has to do with the age of the pig
