Moose Jerky Anyone ??

Was wondering if anyone has done Moose Jerky that might have any recipes suggestions etc...

Backwoods Moose Jerky.

5 lbs trimmed moose strips
2 T salt
1 t cure #1
1 t curry powder
1 t cayenne pepper
1 t black pepper (table grind)
2 T onion powder
1 cup worcestershire sauce (Lee & Perrins is the best)
3 cups cold distilled water

Mix all the above together, and pour over strips in a plastic bowl. Stir well to make sure all meat has been covered with marinade. Put in fridge overnight or if you have a Reveo its faster.  Place on racks and smoke with your choice of wood for 2 hours at 180* Keep at this temp until the desired doneness of your jerky is how you like it. It should bend not break.

If in your smoker have no water inyour pan and vent full open.

Or use a dehydrator at 150*
