Salmon, Chicken and a rack of Lamb for Friday evening Dinner

Just a suggestion but you might want to rearrange your racks so the chicken is under the lamb and the chicken juices are not dripping on the lamb.

BTW, the bones being exposed on the rack of lamb is a big fancy cooking term called "frenching the bones".

Don't be so sure..  The company I work for has this very jet sitting in a hangar a few minutes from here.

It is a Citation X.   Top speed of Mach .92   We could touch down in NE Penn and pick up Pensrock and Nepas, and then a quick stop in CT to pick up Arnie.   If KyNola has a heavy foot, he could be meet me at the hangar in 4 or 5 hours..   

Of course, I'd have to convince the pilots to fly to Jordan.   A few bottles of liquor and that lamb would probably do the trick.    We'd probably have to stop for gas on the Isle of Man.  Manxman - head to the airport, and bring your credit card(s).  These jets are thirsty..

Who's up for the ultimate road trip??

I could guarantee not having a job to come back to, but it'd be a fun weekend.   8)

Hey squirt, all you guys are welcome and it shall not only be what I have for dinner tonight. It would be an honor and a pleasure to have you all over and not only for dinner. I would even sweeten the deal and throw in a case of JD and any thing else you would like.

However, I have some bad news. My stupid camera acted up when dinner was ready and refused to take any photos. I tried every single trick there is without avail. But I can report the following: The salmon was so good no one used their teeth. We only had to twirl it in the mouth and swallow it. The rack of lamb was succulent, crispy on the outside and medium well on the inside (I am the only Jordanian I know that likes medium rare). As for the chicken, the Chinese rub chicken was unbelievably aromatic. The Korean marinated one, was a symphony playing in our mouths. I highly recommend that you guys try it. All in all, stupid camera acting up not withstanding, every thing was great and I can say as a fellow forum member, I made you all proud.
Special thanks would have to go to smokeville for his Chinese rub, WTS for his butter basting the chicken half way through the smoke to give it that exceptional color. To Nepas for allowing me to wear his cap, t-shirt and the use of his towel during the whole process. And last but not least, each and every one of you guys and gals for your support and encouragement. It was never easy to impress my Dad, but tonight, he left with a full tummy and a wide grin on his face.

Hey Larry, I feel like a kid on Chrismass morning and I am floating on cloud nine. I was thinking earlier in the day that this could be a bigger bite than I could chew. But all turned out so good especially when my 12 year old daughter and her friend came to me and planted a kiss on both my cheeks to thank me to a the chicken.

I forgot to mention that I have made cheese cake for desert. However, I made it a bit different from normal. The basic recipe for the cake remains the same but instead or serving it in the every day triangular shape, I poured the mix in those muffin cups papers, put the crumbled cookies, shocked them with 10 minutes of of freezer time, flipped them over on a plate and plealed off the paper thingies. Then I spooned the blueberries all over them. They were also out of this galaxy.

trust me when I say none of us needed a knife. Every thing just fell off or flaked off. Tonight gives me confidence to do the turkey soon. I will be leaning on you some though. Thanksgiving is right around the corner.

He sure did 10.5 and that made it all well worth the effort.

You have to understand that the folks here are not accustomed to smoked food and many are relictant to try new and far out things. So far all those who tried my smoked stuff loved it and some keep asking for more.
