Brisket Time !!

Okay here goes nuthin...

Here we are all trimmed up

Did the site favorite WTS rub..

And here she is going into the fridge overnight..

I did all of this yesterday but took pictures with phone and forgot cable at office, tonight at 2am I throw this in the smoker.. more pics to come

Yeah it is... I didn't have a 2 gallon zip lock so I made due

That is not make due, that will drive them spices deep. Nice idea. Before (and I should use it more often) my vac tumbler, is how I would marinate. It works.   CRG

I agree with you CRG. I just got one vac tumbler last week off UK ebay for 12.99 British Pounds ($21) brand new and it works perfect. It has a 9 minutes automatic tumbling cycle and it drive the flavors deep into the meat.

Thanks CRG I was thinking it was the way to go but it is my first piece of bradley smoked meat so I am still a bit new to all of this ...

I'm asking for a couple of reasons
1.) don't want to mess this up
2.) it's almost 3am and I can't sleep until it is in the oven...My God what has Bradley done to me LOL  :P

Just wait till you eat this it will be great. Last one I made I smoked for 3 hours and kept it in the bradley another 3 hours, then into a big foil pan with a little beef broth and apple juice. covered with foil and finished in the oven. Skim the fat from the juices and use as a gravy. Wow is it good. I did not use a rub, just S&P and garlic.

Yeah, Yeah thanks for pointing out the obvious 10.5  ;D Pens thanks for the help.... Okay here are some more pics from last night.

Pulled out of vacuum bag and waiting for bradley to preheat ( it did great was 28 F out last night and bradley stayed within +/-1 degree of set temp.


And here she is after 4 hours of smoke ready to boat...


Before I continue let me give a HUGE thank you to WTS and all of you who have weighed in here and in your own posts, without your help I would probably have ended up with a giant charcoal turd! ;) Oh and no one warned me in ANY post that once the house starts to smell fantastic you will not be able to sleep.

db is a happy camper. Glad you are having fun. The first time or two can be a little nerve racking. You are on your way to be addicted like the rest of us, but it is a good addiction.   CRG

HAHA well....not everyone  :P
