My OBS arrived yesterday

Nibby, there is a 3-2-1 method that is used by alot of people on forum and that calles for 3 hrs of smoke, 2 hrs wrap in foil with small amount of juice (no smoke) and then an hr outside the foil with no smoke, and that makes very juicy and tender ribs, Babby backs or spare ribs.

I'm with Hawkeye - so many choices.  So I usually cop out unless I really want brisket or something specific.  I will graze the meat counters looking for used meat.  Voila'  Decision made!  Now the family looks at what I buy funny sometimes, because the buy has included oxtails, neck bones, lamb shanks, etc... in the past!  ;D ;D ;D  Ya gotta be adventerous!

Welcome to the fun, be warned, this kind of smoking is very addictive.

Good to here that your ribs turned out good, a couple more times and they will be perfect.

I'm with Caney on the whats next list, I just go for whats on sale then smoke it.

This is as bad as watching the food channel at 10 or 11 at night.  Getting hungry ...
