The day starts bad( where to from here)

Up at 6:30 am got the OBS set up. Jerky on the racks. Preheat and in they go. Hour and a half later that I wanted cause the ribs should be in by 11am. 11:30 jerky comes out, total flop. Didn't move the racks enough, fell asleep watching tv,some burnt,some just overcooked, non of it had any flavour other than too much smoke. I guess 4 hrs is to much, but my marinade was pretty good, so not sure why the jerky has no flav. Maybe cause I marinaded it last weekend and then didn't have time to smoke it so had to freeze it till today. Oh well have to get my brothers exact recipe and try again. What a waste of $20 worth of meat. Hope the ribs turn out. Set them up with 3 hrs of mesquite, 1 hr behind planned schedule. @$#^%& it I'm going to the UPS store to see about shipping some goods for the south and east.

Cousin Q, there's always tomorrow :D  Don't get upset.  $hit happens.

When I was MUCH younger I came home from work and the fire engines were there. 

My father had put something greasy in a pan on the stove.  He went into the LR and took a nap.  I guess it caught on fire.  Without going any farther, I'd have to say it was a bad day.  I like smoke but not that kind.

Q, you have to "attend" your smoker. If momma sees you sleeping while your smoking food, she'll have you doing work while your smoking, and that ain't good.

I hear ya Arnie. I just look at as now that I've done it the wrong way, I know what way not to do it again.LOL Yeah had no intent to sleep but oh well. It would not have mattered anyway. The nice sweet flavour my bro gets was not even there at all. Next time.

Ok so the ribs are doing well. 30 more mins and they will get foiled with splash of AJ



and 2 hrs cooking. The temp is 190f in the tower. Should be good.

Well, you see that Q.  Sometimes when you think things can't get any worse ... never mind.

Don't sweat it Ky, this is not the first time I have made it. It was good the other times. Just my commatose state screwed it up. And you are making the ground meat kind. I used eye of round, argh. I was up to late and awoke to early trying to do to much in one day. You'll do fine.

Q, you know what they say you should do when fall off the horse.

Bad jerky today, great ribs hours after.

Thanks HR, Arnie. Well I had to run out before 4 pm to ship some sauce and when I got back my temp was 150f. So I guess we will be eating at 7pm.

Follow up.  The crummy frozen pizza wasn't half-bad.  Added some EVOO and Italian spices.  Put (quite) a few slices of my smoked mozzarella on top.  Of course, I still would rather have had RIBS!.
