Well today I am smoking my first batch of Italian Sausage. I am 3 hrs into the smoke. I will post a picture of the Sausage when it is done.

Let us know how your sausage turns out.

You do know that 2 to 3 hr of smoke is all you need on the sausage, the rest of the time is just cooking.

Be warned, this kind of smoking is very addictive.

Welcome KC and don't forget to post lots of pix.  You live in a beautiful part of the world.  When I lived in the US I used to drive up to Nanaimo and then take the ferry across to Quadra Island and camp there.  That was a lot of years ago.
