Cardiac Friendly Smoking!

At the risk of incurring the rath of some GREAT smokers/eaters on the forum, I jes GOTTA ask......is there any interest in having a "Heart Friendly Smoking" category on this forum??

Those that know me, know I'm NOT a greeny, Birkenstock sandal wearing, tree hugging, PETA* loving, anti smoker....I read with envy and saliva soaked chin, all the really great descriptions of some of the bacon wrapped things, the juicy smoked/pulled pork, etc....but, alas, my cardiologist says to "KEEP AWAY", and I trust him.  However, I don't hear/believe ANY neccesity to give up smoking ALL things, 'specially King salmon.... [:p][:p][:p] There's veggies, nuts, some cheeses, fish, and other very healthy edible objects that really DESERVE to be introduced to Mr. Bradley. It would be pretty cool to have a category to exchange ideas/experiences on the healthier side of smoking......any interest??

*Actually, I am a card carrying member of PETA.....the "People Eating Tasty Animals" division [:D][:p][:D]

Though some of the meats that I smoke initially contain a lot of fat, I have noticed that when done, the fat is mostly gone.  

Saying that, I would like to see ideas on a healthier foods in the bradley, especially since halibut season is fast approaching and the catching of the stray King or two will require that the Bradley be used a bit more.  There is nothing like smoked halibut - much better than smoked salmon in my opinion.  I used to use a Jensen to smoke my fish, so I would really like idea on using the Bradley for fish.  

Cheese is evil, but smoked nuts and other healthy goodies would be interesting to discuss. (Smoked Whoppers? [:D] (the candy, not the burger))

Nice to see you aboard Sacrifice!! Welcome!! I'm HOPING that you'll be posting a recipe for your smoked halibut....I'd love to give it a try[:p][:p]

I haven't had any smoked 'but yet that was worth trying to emulate so I'm hoping your's will convert me....halibut is great, but a little too easy to overcook and dry out. BUT, I see you're from Juneau so you should have a great recipe for moist smoked halibut if ANYONE does. One of the most memorable grilled salmon I ever had was at someone's home across Gastineau Channel back in summer/69 when I was on my way to serve a year on Eldred Rock Light Station.[:p][:p]

I will try to find the recipe again - its basically the Jenson recipe with a few additions.  I haven't smoked fish in a few years - no boat.  Tomorrow is the first boat show of the year, and I may be walking away with something to murder those poor little innocent fish with.  

Smoked halibut is dry, but I like it that way and leave in the smoker longer than necessary.  Salmon is OK smoked and again, when I smoke it I dry it more than most others.  I like my fish <font color="red"><u><i><b>done</b></i></u></font id="red">.  Even when cooking fresh fish most people would feel my fish is overcooked.  May have something to do with all them biology classes I took [:D].  

I will also find my favorite grilled halibut recipe - has sake, soy sauce and other fun stuff - gooood.  Good thing to place on a "healthy" food thread.

I for one would love to see a "Heart Friendly" section all on its own. Iam 46 now and just started eating oatmeal and taking flaxseed oil capsules for colestoral reduction. I love to cook ,cook out ,and love food smoked. I was hesitant to buy a bradley...knowing that I would be smoking and eating more. but I love to cook and feed people my texas fixings. But for myself and most of everyone else,we must take care of that heart. So I say heck yea, make a special place for the "heart friendly" selections. Just might sell more bradleys and mabe some of us will be aroung just a little longer to show off these fine machines called Bradley Smokers and the fantastic foods it makes!

Just do it! Smoke on!!

I recently discovered the great beneifits with "flaxseed oil" capsuls,liquid oil, and ground flax seed ,all at walmart for low prices. Do a searckh on this ,"flaxseed oil". you will be amased at all the good things it can and will do your you and your body!! This stuff is like a wonder herb. Anyone wanting to reduce cloestoral,lower bood pressure,ect.... this is a must read, check it out.You will be glad you did.

Just do it! Smoke on!!

This is a good idea, but could we use a different title than "Heart Friendly". I am sure that there are many on this forum that have other health issues that require them to maintain a specific diet. How about a section entitled "Healthy Smoking"? The oxymoron was unintended. [^]

Hi All,

I'm probably asking for it here, but since I work at a med school and do cardiovascular research, perhaps I could organize a section of the recipe board (with Olds' OK) that would be a Healthy Smoking section (Habanero, I actually like this moniker).  We already have lots of recipes for fish, shrimp, scallops, etc that are healthy, and I think folks might be surprised at how many of the pork, beef or chicken recipes could be readily adapted to be "healthy".  I still need to work on the Beef, Pork, Lamb, etc Cuts section with Olds before I could get to this, but I'm willing to do it.  Of course, if someone else is willing to take it on, that would be super.  I could just be a consultant providing advice that was worht what you paid for it [;)]!

Great Idea!,  Thanks to JJC for stepping up to the plate (no pun intended).  I would also like to volunteer my services.  I have a heart and would be willing to be the official taster of the recipes to determine if they are tasty and delicious.  While I know this would put a strain on my already stretching wasteline, it's all for a good cause.[^][^][^]
