Cold Smoke

GotBBQ- IMHO I'd stick your handy dandy remote thermometer into the middle of the largest butt- (Kirk, have mercy...[8]) Rotation never hurts as long as the door stays shut as much as possible.

The lowest shelf is always the hottest, so i would rotate if doing 4 butts.

If all four shelves are loaded, and it is a long smoke, I will rotated the top and bottom shelves about midway through the cooking time.

Rotate top to bottom AND 180 halfway through cooking while you refresh the water bowl. Just my .02

Ya think next time I check into a hotel & they ask "Smoking or Non?" they would mind?

Kirk,

After the smoke is done (4-5) hrs, on a 10 hr cook, its not necessary to keep h20 in the bowl, right?[?]

Technically, no. But if you're doing 4 butts at a time and have the bacon drip action going, you will want to make sure the bowl doesn't overflow with drippings.
