Question on Seasoning on Turkey Skin

I have noticed that certain seasonings placed on the outside of turkey or chicken turns gritty after smoking.  Anyone else had this experience?  Anyone have any recommendations for seasonings for the turkey skin and what would be good to rub under the skin?

This rub works really well. It is simple, but adds a lot of flavor to poultry.

Yeah I find that happening to mine too!!  I don't know if it's the lower temp (not rendering) or if it's the reaction the smoke has with the rub.  I've come to the conclusion that I don't like rubs on my chicken or turkey.  That's just me though. I like to use butter or olive oil and some italian seasoning then finish off the last hour or so in the oven to get that crispy skin everyone craves.

Regardless, I'm sure anything will come out good;)
