Another newbie smokin a butt
« on: November 15, 2009, 09:13:28 am »
I was able to get all the info I felt I needed to do my first butt. It's in the Bradley as we speak. I will not be able to complete it today for a number of reasons. I'm going to do 4 hours of smoke and leave it in the Bradley for about another 4 hours. Then I was going to bring it down to a safe temperature, refrigerate, and finish it tomorrow in the Bradley. Has anyone ever started/stopped/finished in this manner?

I've undercooked turkey breasts before (not purposely), quickly chilled, and 'finished off' the next day.  It turned out fine, but it was a much smaller mass that a big Butt...   I guess you could do the same.  ???

I have not done the method you describe, but it sounds ok.

I would probably just leave it in there overnight, and FTC it when it gets to your target IT.

I usually put butts in in the evening for consumption then next day (supper time) - It is a 18-20 hour cook.
